大老爺見我揀鴨,
問我係咪整燒鴨食,
燒鴨週圍都買到啦,
唔好嘥我工夫嘞!
今次係整梅子蒸鴨
19號鴨1隻
老抽 1 湯匙
紹酒2湯匙
醃料:
酸梅十粒, 去核壓爛
酸梅酱3湯匙
磨豉酱 3/4 湯匙
茄汁1.5 湯匙
糖1湯匙
鹽1茶匙
做法:
鴨出水後用老抽, 绍酒摔勻全身上色
再用醃料塗勻鴨身及鴨腔
醃四小時,
然後大火蒸 1.5 小時,
将鴨取出,
待涼, 斬件上碟
将蒸鴨汁撇油,
將餘下汁液大火煮5分鐘,
淋上鴨面即可進食
你揀呢隻鴨好靚, 皮薄肉厚, 好想咬佢隻脾一啖~
